Each Kefirko Milk or Water Kefir Maker Set includes:

- a Kefirko Jar: these glass jars have an elegant, concave shape, which makes them comfortable to handle, and have tactile markings on their outer surface to indicate how much fluid to add, depending on the number of servings wanted.;

- a Top Lid: which includes a built-in measuring cup to use when adding the kefir grains, and which allows enough airflow to accomplish the kefir-making, while also helping prevent impurities such as fruit flies from entering the jar.

- a Strainer Lid: which functions as a sieve, with two distinct pouring or rinsing areas -- one with larger slots, for pouring milk kefir out (or for rinsing its larger-sized kefir grains with water, before beginning), the other with smaller slots, for water kefir -- and a specially shaped outer rim to make it easy to pour the finished kefir into a glass;

- a Scraper: a tool for stirring up the kefir grains during the straining operation to ensure they become detached from the drink, and to cover the hole in middle of the strainer lid to speed up that operation;

- a Squeezer: to enable you to squeeze fresh citrus juice directly into a water kefir after it has been strained, for additional flavour;

- a Swizzle Stick: a 7-1/4 inch long utensil both for stirring the kefir and for adding the grains (it is open on one side, with 1/4" walls, to serve as a long scoop); and,

- a two-page User / Instruction Manual with diagrams, and a printed Recipe Booklet with over 30 recipes.

Suggested Usage:

HOW TO MAKE MILK KEFIR

1. Put the grains into the jar (about a strainer lid's full, for the small jar [there is a measuring cup integrated into the lid], or two lids full, for the larger one) and add the appropriate amount of milk: up to the first marking (= 300 ml) on the 848 ml container for one serving and up to the second mark (600 ml) for two servings.

2. Open the top lid of the jar slightly to allow the air circulation needed for the fermentation. Leave it like that at room temperature for about 24 hours. The primary fermentation is finished when the liquid becomes thicker.

3. When the process of primary fermentation is finished (~ 24 hours), remove the strainer lid and use the swizzle stick to gently mix the produced kefir. This will help you pour it. You can also mix the kefir by shaking the Kefirko container; however, be sure to firmly screw its top lid before.

4. After shaking the jar, apply the strainer lid and simply pour the kefir into glasses. The special design of the strainer lid will keep the grains inside the jar, separating them from the liquid.

HOW TO MAKE WATER KEFIR

1. Put the grains (sold separately) into the jar and fill it with fresh water, and add sugar and/or sweetened dried fruits. (Use about a full strainer lid of grains, for the small jar [there is a measuring cup integrated into the lid], or two lids full, for the larger one; and 2 to 3 tbsp of sugar for the small jar or twice that for the large.) With a full lid of tibicos grains, you can prepare 0.6 L (20 oz) of water kefir, which is two servings.

2. Open the top lid of the jar slightly in order to allow the air circulation needed for the fermentation. Leave it like that at room temperature for about 24 hours.

3. When the process of primary fermentation is finished (after approximately 1 to 2 days). Remove the top lid and strain the kefir into glass jar/bottle. The grains will remain in the Kefirko jar.

4. After the kefir is strained you can add some fruit juice or squeeze fresh citrus juice into the water kefir. You can seal the bottles and leave it in the fridge for another day for second fermentation.

ADDITIONAL TIPS

Secondary Fermentation: Seal your glass of fresh kefir with an airtight lid and put it in the refrigerator for one day to complete the secondary fermentation process. This will add the full spectrum of probiotics to your kefir while preserving its freshness on the next day, and it can also give the milk kefir version a creamier texture while also reducing its lactose content.

Kefirko produces a Second Fermentation Lid available for purchase here for that purpose, which comes with a Fermentation 'Clock' or dial to help keep track of the fermenting time. With a drinkable spout, it also doubles as means of transporting your prepared kefir to drink at work or elsewhere.

How to Store Extra Kefir Grains: You can either prepare a new batch of kefir or store the kefir grains. If you want to store your extra milk kefir grains, put them in a small jar and add some milk (for a shorter period – up to 7 days) or add water with a pinch of sugar (for a longer period - up to 2 months) and store the sealed jar in the refrigerator.
