Cacao nibs can be used like chocolate chips (although they're firmer and don't melt at the same temperature as conventional processed chips do). Whether in baked goods or hot drinks (which might remove some of their most beneficial antioxidant properties of its constituent flavonoids); blended into ice creams or smoothies; added to granola or a trail mix; or sprinkled on as a topping to desserts. 

Beans are fermented in wooden containers, when they are still surrounded by the fruit pulp of the cocoa pod, which supplies the yeast, sugar and pulp to be transformed into alcohol and CO2 when they are warmed.
