Additionally, the Assistent can also be outfitted with separate pasta attachments, which are designed specifically for cutting and rolling pasta.
Suggested Usage:
Fit the pasta disc onto the machine, as shown in this instructional video. Run the machine on high speed, and feed walnut-sized balls of pasta dough through the mincer. Let the pasta emerge onto a kitchen towel or a rack. Allow the pasta to dry before cooking it.
The pasta discs are dishwasher safe; the mincer must be washed by hand.
To prepare the pasta dough on your Assistent, use its dough roller and dough knife. Pour 350 g (12 oz) of durum wheat flour into the bowl and run the machine on low speed, cracking open and adding 2 large eggs into it as it mixes. Lock the dough roller 1 to 2 cm from the edge of the bowl, and knead the dough until it's smooth, which takes about 5 minutes. Then knead the dough by hand on a work surface coated with flour. If the dough seems dry or crumbly, add a little lukewarm water. Shape the dough into a ball and allow it to rest. Cover it to prevent it drying out.
Warnings:
Always use the plunger to feed things through; never stick your hands or other objects into the mincer.
