Info: Fine Mesh Strainer (Chinois)
Currently unavailable; please see the related products below for somewhat comparable offerings.
This is a large, elegant, cone-shaped strainer made of high-quality stainless steel. It has a very fine mesh, making it suitable for filtering even the tiniest lumps or particles out of soups, sauces, broths, or gravies (or even large quantities of tea or coffee, for that matter). Many chefs and fine restaurants call this type of device a "chinois" (based on the French adjective for "Chinese"), and it's often used with a cone-shaped pestle, to mash the lumps or to wring the remaining liquid through. In addition to that primary use, this tool can also be used to sprinkle fine powders such as icing sugar or cocoa onto large cakes, for example.
The cone is about 10 cm deep, and the diameter of its interior is over 15 cm at the top. The strainer can be hooked into a pot or bowl using its large (over 8 cm wide) hanging handle at the end, to free both hands to hold the pot while you pour.Part of Fissler's 'magic' line of fine kitchen accessories, which are made completely of high-quality 18/10 stainless steel: the functional parts are made of polished stainless steel; the handle elements of matte polished stainless steel; and they can all be hung on hooks using their high gloss polished stainless steel eyelets.
Suggested Usage:Can be used both to strain soups, sauces or other liquids with very small lumps or particles, and for sprinkling very fine powders.
