For those who may have forgotten or perhaps never knew, wheat flour isn't the only or even the best way to thicken up liquid-based foods such as soup stocks, gravies, stews, and sauces, or desserts such as puddings or fruit pie fillings: corn starch can do the trick, too, with twice the thickening power by volume! That's good news for those with celiac disease or gluten intolerance, since corn starch is completely gluten free.
Of course, these days, some types of corn have been genetically modified, to make them more resistant to insects and herbicides (although they are generally meant to be restricted to animal feed in North America). But fear not, this type from GoBio! (which originates in Germany) is both Certified Organic and non-GMO.
Certified Organic (by Pro-Cert.) non-GMO Corn Starch.
1 Tablespoon (10g) of corn starch thickens 1 Cup (250ml) of liquid.
To thicken hot liquids (into a gravy, e.g.), first mix the corn starch with a little cold liquid (either of the same type, or just water) to create a smooth paste. Then gradually add that paste to the hot liquid, stirring constantly, and bring it to a boil. Boil it for about a minute, until the liquid becomes clear. Remove from heat.
