Product Notes:

We've all been told we should try to get more proteins from plants like pulses (the dried edible seeds of legumes, which grow pods) now, and less from meat – which is becoming much more expensive, anyway! – and that meals made from scratch are the most nutritious. But frankly, we don't all know how to do that (which combinations to use? and in what ratios? and how long do they need to cook?), or have the right spices on hand to make them truly tasty.

The Stak Co. is a local small business founded by Suzan Stupack, a Métis woman mentored by many cooks in her extended family, who abbreviated her name for this purpose, as she developed “ready-to-be-made” meal options featuring only vegan, gluten-free, Manitoba-grown, high protein pulses accompanied by a flavourful mix of spices with no preservatives or additives, and without a lot of sodium.

These self-contained meal mixes can make for an excellent small gift or contingency plan, whether for yourself or for a novice cook as an initial foray into expanding a  limited repertoire of cooking. They're a great vegetarian option for a potluck dinner, or simply to keep on hand for any number of occasions.

Easy to Make

They're easy to prepare: simply add 6 cups of water and boil them for either an hour an a half (for the pea soup) or for 2-1/2 hours (for the others), either on the stove, or in the oven (in a closed, dutch oven style pot), or on a campfire or barbecue, for that matter. You just need to stir them and top them up with water, occasionally.

Ingredients:

Tortilla Soup Fiesta: Black beans, kidney beans, pinto beans, dehydrated carrot, chili powder, salt, spices, garlic powder, cayenne pepper, dehydrated pepper, salt.

Loco Burrito: Pinto beans, black beans, chili powder, salt, spices, garlic powder, chili pepper, cayenne pepper, dehydrated pepper.

Northern Classic Chili: Great Northern beans, kidney beans, chili pepper powder, spices, salt, chili flakes.

Split Pea Soup (aka "Housework Makes You Ugly Pea Soup"): Yellow split peas, spices, sea salt, dehydrated onion, dehydrated garlic.

The beans in these mixtures have all been graded (with only the Grade A beans being included), cleaned, and polished, so no pre-washing or soaking is needed.

Each pulse mix variety produces a tasty low fat, gluten-free, and nut-free dish offering a powerhouse of nutrients including protein, complex carbohydrates, fiber, potassium, folate and B vitamins.

Suggested Usage:

The instructions are given in twin sets on the back of each pack, for your choice of stovetop or oven cooking. You can also use pressure cookers, bonfires, or barbeque side burners.

They do *not* recommend using crockpots or slow cookers, however (although some opt to do so, nevertheless), and whichever method of boiling you use, it is important to ensure that the water level remains above the ingredients during cooking to avoid scorching the beans, and that you don't shortchange the time, lest you sacrifice some of the flavour. And if you choose to add acidic ingredients such as tomatoes or vinegar to your dish, don't do so too early in the cooking process; otherwise, the beans won't soften right.

After they're cooked, the leftovers can be kept in the refrigerator for up to 5 days (keep them in their cooking liquid to prevent drying out), or you can just freeze them and use them again for another whole meal, as the case may be.
