These Ankarsrum accessories are made from durable stainless steel.
There are two generations of pasta rollers or cutters now, which both work with the Ankarsrum Assistent: Ankarsrum's original more cylindrical Fettuccine and Tagliatelle units shown in the product photo and video below, and the subsequent Lasagna and Spaghetti editions (which are more rectangular).
The original Fettuccine Cutter is machined to produce noodles 6.5 mm wide, while the Tagliatelle cutter (which is now sold-out) produces flat noodles 2 mm wide.
The latest versions of lasagna roller (wide strips, great for lasagna, ravioli and perogies), and a more traditional spaghetti cutter, may also be available by special order, which would entail an additional shipping and handling fee. These are made by an Italian company, Marcato, which has been making pasta rollers over 80 years. The Marcato Lasagna Roller can make pasta plates ranging from 0.6 to 4.8 mm in thickness (it has an adjustable output), while the noodles produced by the Spaghetti Cutter are 2 mm in diameter. The Roll Width for both of these Marcato units is 145 mm.
Suggested Usage:
Prepare your pasta dough. If you have a lasagne pasta roller, you can use it to produce sheets of pasta, rather than a rolling pin to roll the dough out into sheets.
Attach the selected roller to the machine's drive socket. Feed the pasta sheets through on medium speed. The first portion of dough is to be used to clean the attachment, is to be discarded. Hang the rest of the fresh pasta on a rack, or allow it to rest on a kitchen towel for about 10 minutes before cooking it.
Clean the roller using a fine brush or a soft cloth (but never during operation). The roller should never be washed or submerged in water, as this may cause it to rust.

Warnings:
Only pasta dough may be used with the pasta roller. Never stick your fingers or any objects into the roller. Never lean over the roller while the machine is running.
