It tastes good (with a nutty flavour, as you'd expect); and has a good mouth feel (with a buttery-smooth texture); and has a high tolerance for heat and a very high smoke point (400 to 450°F!), making it quite versatile for both baking and frying. With up to 79% monounsaturated fat, 0 trans fat, and an incredibly low 2.2 grams of saturated fat per tablespoon, NOW's Macadamia Nut Oil has one of the healthiest unsaturated to saturated fat ratios (more than 4 to 1) -- even greater than that of olive oil. It's also very stable, requiring no refrigeration and having a shelf life of up to two years.
To retain the naturally occurring vitamins and enzymes without destroying them through excessive heat, or using a solvent such hexane, or other questionable processing methods, this was created through a good old-fashioned expeller press and double filtration process.
