Food Oils
If you're cooking with fats, look for products with high smoke points that are not high in omega-6 including butter (ghee or clarified is best), lard, beef tallow, coconut oil, macadamia nut oil, camelina oil, and extra virgin avocado oil. Macadamia nut oil is higher in monounsaturated fats than olive oil, has a wonderful nutty flavour, and can be enjoyed cold in salads, or heated, with a smoke point of 210 °C (410 °F). Extra virgin avocado oil has a smoke point of 250 °C (482 °F), is high in phytosterols, which have immune system balancing benefits, has a wonderful buttery taste, and is also higher in monosaturated fat than olive oil, making it heart healthy. Other healthful oils that can be used for salads include extra virgin olive oil and Styrian pumpkin seed oil (which provides many health benefits for the prostate gland). I make the most delicious mayonnaise with a blend of avocado and macadamia nut oil. - Nathan Zassman
